“Jenga, Jenga, Jenga” French Toast Sticks Tower with Berries and Bananas
Yesterday I had the pleasure of spending the afternoon with my 4 and 6 year old cousins, Jackson and Trent. We spent the afternoon playing Guitar Hero, looking through my telescope and playing hide & seek.
Spending time with them got me thinking about how much I miss being a kid. I miss being able to eat noodles smothered with butter and salt, eating big slices of carrot cake with a side of chocolate milk. Or taking bubble baths and putting the bubbles on my face to pretend like I was Santa Claus.
When I got up this morning, I decided that I was going to make a breakfast that made me feel like a kid again.
What You Need:
2 Slices Bread
1 Egg
1 Egg White
1 Tsp Vanilla Extract
Splash of Milk
Cinnamon Sugar
Peanut Butter
Sliced Berries
Sliced Bananas
Honey
Maple Syrup
1. In a shallow dish, mix together the egg white, egg, vanilla extract, milk and 1 Tsp of cinnamon sugar. Then, grease a pancake griddle/pan and set on medium heat.
2. Soak the slices of bread so that they are completed coated with the egg mixture on both sides. Place both slices onto the pre-heated pan. Heat the slices on both sides so that the egg mixture is completely cooked.
3. Remove the french toast from the pan and slice into 1/2” thick strips. Create a log cabin/jenga style tower with the strips. Fill the middle of the tower with the berries and bananas.
4. Serve with a side of 3 dipping options. Peanut Butter/Honey dipping sauce, cinnamon sugar and maple syrup.
